Christmas Brie Appetizer will impress your guests and it's so easy to make! Also
known as Pesto Brie. Wonderful served with bruschetta or crackers.
Ingredients:
1 7- to 8-inch wheel of Brie
cheese
Store bought pesto
1/2 cup dried cranberries, chopped
1/2 cup
sun-dried tomatoes, finely chopped
1/2 cup pine nuts, toasted
Bruschetta
(toasted bread) or crackers
Preheat oven to 375 degrees. Cut Brie wheel
in half to form two thin rounds, using a sharp knife. Place one piece of Brie on
a baking sheet, cut side up. Spread with pesto to cover; sprinkle with dried
cranberries, 1/4 cup of the dried tomatoes and the toasted pine nuts. Top with
the other piece of Brie, cut side down. Place in the oven for 10 to 15 minutes,
or just till cheese is softened. Transfer to serving platter. Slightly remove 1
wedge for easier serving, and scatter remaining cranberries around the plate for
garnish. Serve with bruschetta (toasted bread) or crackers. Makes a lovely
Christmas Brie Appetizer. Great with a good wine.
