Smashed potatoes are all the rage in restaurants these days, and easier to make
than mashed potatoes.
3-3/4 pounds potatoes, (about 6) peeled and
quartered
6 ounces cream cheese
3/4 cup sour cream
2 teaspoon minced
garlic (jar)
3/4 teaspoon salt
Dash pepper
Place potatoes in a
saucepan and cover with water. Bring to a boil.
Reduce heat; cover and cook
for 15-20 minutes or until tender. Drain
and place potatoes in a large bowl;
mash the potatoes. Add the remaining
ingredients; mix well.
Transfer
to a greased 8-inch square baking dish. Bake, uncovered, at
350 degrees F
for 30-35 minutes or until lightly browned.
