Recipe For Classic Potato Salad
Classic potato salad, a great tasting easy to prepare dish ideal for summer
picnics and outdoor cookouts.
Ingredients required:
2 pounds russet
potatoes (6 medium)
1/2 teaspoon salt
1-1/4 cups mayonnaise
1
tablespoon yellow mustard
1/2 teaspoon salt
1/4 teaspoon black
pepper
1 cup diced celery (2 stalks)
1/3 cup chopped onion (1
small)
1/2 cup dill pickle relish
6 hard-boiled eggs, cut
fine
Paprika

In a large saucepan place potatoes, 1/2
teaspoon salt, and enough water to cover. Bring to boiling; reduce heat. Simmer,
covered, for 20 to 25 minutes or until potatoes are tender. When pierced with
fork, they should drop quickly. Drain well; cool slightly. Peel and cut the
potatoes into cubes.
In separate bowl, combine the mayonnaise, mustard,
salt and pepper. Stir in the celery, onion, and relish. Add the potatoes and
eggs. Toss lightly to coat. Cover and chill for at least 4 hours. Makes 12
servings.
