Spicy Low Calorie Chicken Cacciatore




A great tasting recipe for cooking chicken cacciatore. In Italian the word cacciatore refers to a meal prepared "hunter-style" with tomatoes, onions, mushrooms, herbs, often bell pepper, and sometimes wine.

Ingredients required:
2 chicken breast halves, boneless and skinless
1/2 teaspoon salt
black pepper to your liking
1 chopped red onion
1 tablespoon capers
2 tablespoons fresh or dried basil
1/2 teaspoon dried red chilli flakes
14 ounces canned chopped tomatoes
2 red bell peppers, chopped


Season the chicken with salt and pepper. Spray a large skillet with pan spray and brown chicken over medium heat about 3 minutes per side.
Place the chicken on a plate and set aside. Add the remaining ingredients to skillet and simmer for around 10 minutes.
Return the chicken with it's juices to the skillet and spoon the sauce over chicken. Cover and simmer until chicken is tender and cooked through.
